Lovingly restored by Deirdre Lyons, wife of the late Dr Pearse Lyons, founder of Alltech, the distillery is packed full of stories, history, culture & spirits of the alcoholic kind!

Irish Whitetail Distillery

Casks Away first encountered this new entrant into the Irish Whiskey scene at the annual extravaganza that is Whiskey Live Dublin.

Fronted by two young and enthusiastic Americans of Irish descent, they offered their slightly unconventional 12 Point Rogue Buck Whiskey for tasting.

Irish Whitetail 2

It features a 10 year old sourced Irish Single Malt Whiskey finished in African Mahogany wood.

The results were certainly tasty, and offered a new range of flavours to the category.

Plans are afoot to build a distillery on the picturesque Carlingford Peninsula.

Irish Whitetail 1

Irish Whitetail’s website isn’t giving too much away.

Casks Away hopes this is a temporary situation and would love to see this young couples dreams come to fruition.

Great Northern Distillery

Located in the former Great Northern Brewery site in the border town of Dundalk in County Louth, the Great Northern Distillery will be a positive powerhouse of whiskey production in Ireland.

Established in 2015 by John Teeling, the distillery will follow the extremely successful strategy of producing whiskeys of varying styles for 3rd parties such as pubs, supermarkets, independent bottlers & brand makers.

GND 1

A trio of ‘First Born’ whiskeys were revealed at the Whiskey Live Dublin 2018 show to much satisfaction.

Capable of producing all four types of Irish Whiskey; Single Malt, Single Pot Still, Single Grain and Blended Whiskey, Great Northern can make a whiskey to satisfy any taste, style or pocket you desire.

Casks Away looks forward to these whiskeys appearing in stores around the world soon, as well as guiding you to this impressive facility.

Dublin Liberties Distillery

Dublin Liberties Distillery is the latest whiskey distillery to open it’s doors to visitors in Ireland’s Capital City.

Located in the historic area of The Liberties, the distillery combines tales from the past mixed with a thoroughly modern twist to showcase their range of fine single malts and blends.

DLD 2

Production has already started and fully guided tours allow a close up look of how whiskey is made.

It will be a few years yet before their own distillate is matured, but in the meantime you can sit back and enjoy a few samples in the sumptuous bar, or even a cuppa tea and a snack in the downstairs cafe.

Immerse yourself in the ‘rebels, rascals and raconteurs’ of Irish Whiskey.

Dingle Distillery

Dingle may have risen to fame with the exploits of Fungi the Dolphin, but a new kind of spirit is continuing the attraction, whiskey.

Dingle 2

Dingle Distillery was the first of the next generation of Irish Whiskey Distilleries to release it’s own whiskey to much acclaim.

Bottles of the early batches now go for crazy money on the secondary market.

Dingle 3

The latest offering, Batch 4, is of a far larger production run that will hopefully see the whiskey available on a worldwide scale.

Situated on the Wild Atlantic Way set in the stunning scenery of County Kerry, Dingle Distillery is a must see for any fan of Irish Whiskey.

Contact Casks Away for a journey of discovery into Dingle Whiskey,  the fabulous seascapes of the coastal distillery, and a glass or two in nearby Dick Mack’s Pub & Brewhouse.

Chapel Gate Irish Whiskey

Chapel Gate aren’t a distillery.

They are whiskey bonders.

Chapel Gate have revived the lost art of whiskey bonding to a family farm in County Clare.

Whiskey bonding used to be common practice in Irish Whiskey’s hey day.

The bonder would buy whiskey from the distillery, (or distilleries), barrel it in casks of their own choosing, mature it, blend it, mix it and bottle it to their own requirements under their own labels for sale.

JJ Corry was an active bonder in the Clare town of Kilrush which nearby Chapel Gate have revived for their modern operations.

Spearheaded by founder Loiuse McGuane, Chapel Gate have released award winning blend The Gael,

JJ duo
JJ Corry Flintlock & Gael Whiskey

As well as top in it’s class single malt The Flintlock.

A new blending room and visitors centre are due to open soon.

Casks Away are eager to whisk you away on an adventure to West Clare to explore the lost art of whiskey bonding.
