Baoileach Distillery is truly a boutique operation crafting spirits of quality with a direct fired copper pot still in a stone cottage in beautiful Donegal.

Casks Away unfortunately hasn’t been able to visit this exciting distillery due to the COVID pandemic.

The Shed Distillery

From the ‘Curious Mind’ of P.J. Rigney and The Shed Distillery in Lovely Leitrim comes a trio of well crafted spirits.

First off the stills was Gunpowder Irish Gin.

Then Sausage Tree Pure Irish Vodka.

And recently The Inaugural Release Drumshanbo Whiskey.

A Single Pot Still Irish Whiskey using a mixed mash of malted and unmalted barley together with some oats.

All three are presented in exquisitly designed bottles and packaging.

All three are liquids of high quality and have been extremely well received in their respective categories.

A new visitors centre for the distillery is expected to open later in 2020.

Sliabh Liag Distillery

Sliabh Liag Distillery on the rugged Donegal coast are already making their own Gin and Vodka using botanicals foraged from the local area.

But whiskey making is the final goal.

Plans to build in a field outside of Carrick with stunning views over Donegal Bay to the distant Sligo shore beyond had to be shelved.

Fortunately that hasn’t deterred the owners and site clearance has began in Ardara, a picturesque village a few miles up the road.

Along with their own An Dúlamán Gin, Sliabh Liag have also released The Legendary Silkie Blended Irish Whiskey in advance of construction.

Skellig Six18 Distillery

Skellig Six18 Distillery is one of the next generation Irish Whiskey Distilleries springing up around the Emerald Isle.

Named after the 618 steps on Skellig Micheal to reach the World Heritage Monastery Site, the distillery is situated on the Wild Atlantic Way in the County Kerry town of Cahersiveen.

Star Wars came to Skellig a few years ago to shoot some scenes on the island. Tour boats can take you out to Skellig, weather permitting.

Skellig Six18 Distillery Visitors Centre is expected to open in spring 2020 for those wishing to visit this stunning new facility.

Skellig Six18 have already released their own gin and intend to make a single pot still as their first whiskey.

Rademon Estate Distillery

Nestled in the gently rolling countryside of County Down 15 miles south of Belfast is Rademon Estate Distillery.

Rademon 3More famous for their Shortcross Gin, which has been out for a few years, Rademon Estate Distillery have also been quietly laying down spirit in wooden casks for more than the minimum 3 years maturation period to shortly release their first whiskey.

Killarney Distilling Co

The speed at which Irish Whiskey is expanding is breathtaking.

New developments are popping up everywhere.

The Killarney Distilling Company (newspaper article here) intend to build a whiskey distillery on a site near Fossa on the picturesque Ring Of Kerry.

Old Carrick Mill, Monaghan

On my journeys around Ireland it always amazes me discovering new whiskey ventures.

Ventures like Old Carrick Mill in Carrickmacross, County Monaghan.

Currently producing Old Carrick Mill Small Batch Irish Gin, they have installed some shiny new copper pot stills and will be distilling their own whiskey soon!

They are offering fans & followers the opportunity to purchase the first casks off the stills here.

Micil Distillery

The chance to visit a sixth generation Connemara Poitín maker at work in his distillery in the City of Tribes that is Galway is a unique experience.

Micil Distillery has concentrated on producing that pure Irish spirit known as poitín.

Poitín is essentially unaged whiskey.

It was (and still is) produced illegally for many years. Thankfully Pádraic is the first of those six generations where you can see and taste this historically fine spirit without fear of prosecution!

Tasting tours are available at the micro distillery in the Oslo Bar in Galway’s popular seafront suburb of Salthill.

Lough Ree Distillery

Lough Ree Distillery are currently starting to build a whiskey distillery only a stones throw from the mighty River Shannon at the Northern end of Lough Ree in the County Longford town of Lanesborough.

A gin still is already in production in the town making the popular Sling Shot Gin for the company by their Master Distiller Claire.

Offering a ‘buy your own cask’ programme to have one of Lough Ree’s first Single Pot Still Whiskeys when they come off the stills, the new distillery have ambitious plans.

Lough Mask Distillery

Lough Mask Distillery is a new micro distillery set in the stunning County Mayo countryside nestled below the mighty Maumtrasna mountain range on one side, and the crystal clear waters of Lough Mask on the other.

Using a pair of unusual Alembic copper pot stills Lough Mask are already producing Gin and Vodka.

Their whiskey will quietly mature in a combination of American and European oak barrels.

There is an offer to purchase some of the first casks produced at the distillery.

Based in the Tourmakeady Gealtacht or Irish speaking area, the distillery proudly displays ‘Drioglann Lough Measc’ on it’s freshly painted white facade.
